Welcome to the weekend, my friends! We saw a few lovely days of sunshine this week, and it was great to get outside for a couple of walks and some fresh air. I know it’s going to get cold again, so I’m soaking it in while we can. If you happen to be on the east coast and were in the path of the blizzard last week, I hope you’re staying warm and that the snow in your area is beginning to melt!
ON THE BLOGS THIS WEEK: Looking for the easiest, tastiest crispy chicken? Baked Italian Chicken delivers big with just a handful of ingredients.
Skip the stovetop and make perfectly tender Baked Rice in the oven, perfect for busy weeknights or holiday dinners.
This bold Cowboy Butter is packed with garlic, herbs, heat, and lemon zest. It’s simple to prep and impossible not to put on everything.
Cabbage Crunch Salad is a super fresh, crunchy cabbage slaw in a beautifully balanced tart and slightly sweet dressing with a hint of nutty sesame and almond.
Sweet dried cranberries, salty bacon, sharp red onion, crunchy pecans, and creamy cheese come together in an awesomely flavorful and texture-filled way to make this Broccoli Salad.
Fresh (or frozen!) strawberries are tossed with sugar and cinnamon before being layered under a sweet biscuit crust to make this unforgettable Strawberry Cobbler.
These Homemade Apple Fritters are baked instead of fried, making them an easy treat to whip up on a whim.
My FAVORITE THING this week is my dish brush. I genuinely love this silly thing. I will be the first to admit that I have a lot of help in the kitchen. My kids and husband are pretty amazing and they handle the vast majority of the dishes our household creates, but this week? There were a LOT more dishes than usual due to my work and photography and recipe testing.
And that reminded me once again just how grateful I am for this little gadget. The grip is comfortable. It dispenses soap at the push of a button, and it doesn’t drip or leak at all. The brush head detaches easily for cleaning or replacement. I have to admit that the dishes have never been less annoying – and that says a lot, since I really am NOT a fan of doing dishes.
What I’m LISTENING to (on repeat): Walk Through Fire by Ben Fuller. I listen through it several times a week and start most of my days with it. It’s a beautiful reminder of what Jesus has done and continues to do in my life.
“God is our refuge and strength, an ever-present help in trouble. Therefore we will not fear, though the earth give way and the mountains fall into the heart of the sea, though its waters roar and foam and the mountains quake with their surging.” Psalm 46:1-3 NIV
Wishing you a beautiful week filled with little things that make you smile!
Mary
