Welcome to the weekend, my friends! I’m visiting family and friends this week and looking forward to a long weekend of games and laughter before starting some work days with friends later this week. And just because I love you all too much to let you miss out on the fun, if you haven’t yet checked out Wingspan and Hitster, put both of them on your must-try games list soon!

ON THE BLOGS THIS WEEK: Light and fluffy, slightly tangy, Buttermilk Pancakes – these are the diner style pancakes that you love. This recipe is the reason there is always buttermilk in our fridge.

Hot, crisp, juicy pork is tucked into warm tortillas to make these Carnitas Street Tacos. Topped simply with crunchy shredded cabbage, red onions, fresh cilantro, and plenty of lime, these tacos are street food at its very best. This has been one of my family’s favorite meals for several years now, and I never get tired of making it.

Piled high with crispy pork, rice, black beans, corn, crunchy cabbage, and a generous squeeze of lime, this Carnitas Bowl is everything I want in one simple package. Twenty minutes. That’s all it takes. How can I say no?

Crispy breaded chicken gets covered with melted provolone cheese and marinara sauce in these Chicken Parm Sliders, topped with a buttery garlic Parmesan topping. Blink and they’ll disappear before you’ve even had a chance to sit down.

This rich and creamy Baked Spinach Artichoke Dip goes into overdrive with crispy bits of bacon. It has become one of my go-to recipes when hosting a gathering, or to take along with us to a potluck. People simply love it!

Sweet corn, creamy potatoes, and crispy bacon are tossed with a smoky, tangy, street corn-inspired dressing to create the Mexican Street Corn Potato Salad of your dreams.

Buttery crunchy toffee and candy bar pieces are layered with whipped cream atop a dessert so deliriously rich, this Heath Bar Cake should probably carry a warning label.

My FAVORITE THING this week is this basic OXO silicone pastry brush. I had no idea what I was missing! In all my years of baking and cooking, I’d never actually bought a really good pastry brush. I went from a super cheap brush in my early years, to the random silicone ones I’d been gifted by different brands at events I attended and because they worked “fine,” I just assumed they were all the same. Uhm, no. No, they are most definitely not all created equal. 

This fantastic little pastry brush actually grabs onto the sauce with the interior bristles and then distributes it beautifully. I can hardly wait to glaze and brush and baste all the things now. And yes, I really am this excited. (It doesn’t take much, does it?) Quality tools make cooking so much more enjoyable!

What I’m LISTENING to: Counting My Blessings by Seph Schlueter. I first heard the title track come up in one of my playlists and I was hooked from that first listen. I love the entire album now.
